To make churros, combine sugar and cinnamon in a shallow bowl.

Bring the water to a boil in large saucepan. Whisk in oil. Whisk in combined sifted flour, salt and bicarbonate of soda to form a smooth batter.

Spoon batter into a piping bag fitted with a large star-shaped nozzle.

Working in batches, pipe 10cm lengths of batter into hot oil, using scissors to cut off lengths. Fry for 3 minutes or until golden and crisp. Remove with a slotted spoon and drain on absorbent paper. Roll in cinnamon sugar.

To make chocolate sauce, bring 800ml of the milk to a simmer. Add chocolate buttons and stir until melted and combined. Whisk cornflour and remaining milk together. Add to chocolate mixture. Bring to a boil. Simmer, stirring, until thickened to form a sauce.

Serve churros with chocolate sauce.
